Alaska Seafood Talk

Alaska Halibut

It had been a while since I had eaten some Halibut.  I had been eating a lot of salmon.  So I pulled out some halibut for the family and I to eat.  I took the FRENCH’S® French Fried Onions and crushed them and dipped the halibut in egg and then in the crushed FRENCH’S® French Fried Onions.  Then I baked the halibut. MMMMM!  I missed eating halibut.  It was so good…the key thing is to remember not to over bake the halibut.  You don’t want to dry out the halibut.

Mt. Redoubt

Our office, plant and where we harvest our wild salmon is located 50 miles across from Mt. Redoubt.   Today is  a nice clear, sunny day so I decided to get a picture of Mt. Redoubt in action.  As you can see Redoubt is letting off steam.

Mt. Redoubt

We are still taking and shipping orders when the volcano allows.  So far we have been able to  get orders out every week thanks to FedEx and their efforts to get our seafood out as soon as the sky clears.

Alaska Salmon

We are getting low on Alaska Salmon, the days are getting longer and the snow is slowly melting…summer and the 2009 salmon season are getting closer!  We will start our salmon season around June 21st, 2009.  We are regulated by Alaska Fish And Game so the day can very.

We are planning a sale or two this month and next month.  Watch our newsletter for that anouncement.

Mt. Redoubt Volcano

We are keeping an eye on Mt. Redoubt.  We commercial fish directly across from the volcano, our plant is also across from the volcano and yes our office is right across from Mt. Redoubt.  If Mt. Redoubt does go off then I hope to get some great photos to post.  We are about 50 miles from the volcano.

Captain Crunch & Wild Salmon

Yes Captain Crunch and Wild Salmon and no it isn’t a new cereal it is a tasty recipe.   This idea was sent to me by my sister-in-law.

Take Captain Crunch cereal (regular not crunch berry) and pour some into a large zip lock bag.  Take a rolling pin and and smash the cereal into a powder for coating the salmon.

Cut the wild salmon into inch size chunks.  Dip the salmon into egg, then into the Captain Crunch powder and then pan fry it (high heat) in peanut oil.

That’s it!  Enjoy!

Alaska Winter

Here at the R&J Seafoods office it was -30 this morning.  I have lost count but it has been over 9 days of -20 or lower.  It looks like good weather this weekend, 20 above!
