Our Alaska Seafood line of products will be increasing beyond what our family harvest (salmon, halibut). We have added King Crab. Scallops and Crab Cakes are next along with Jumbo Prawns. We have a lot of request for other seafood and decided to respond to the growing request. What I enjoy is tasting all the different products to make sure they live up to the standards that we have set on our wild salmon and halibut. It’s a tough job that I enjoy. As I write this post I am finishing off a plate of scallops!

We get a lot of business from people who want to know “Where to buy halibut?” Of course R&J Seafood’s catches, processes and sells halibut year round. What I didn’t realize when we first started selling salmon and halibut online was the amount of people that are looking to buy halibut and buy salmon from the fisherman directly. I find it rewarding to continually supply the same customers year round with halibut and salmon. We have become the “local store” for many who are looking for someone to supply them with Alaska seafood. For most we are thousands of miles away but we still maintain that “local store feel”. It had been a while since I had eaten some Halibut. I had been eating a lot of salmon. So I pulled out some halibut for the family and I to eat. I took the FRENCH’S® French Fried Onions and crushed them and dipped the halibut in egg and then in the crushed FRENCH’S® French Fried Onions. Then I baked the halibut. MMMMM! I missed eating halibut. It was so good…the key thing is to remember not to over bake the halibut. You don’t want to dry out the halibut.

Our office, plant and where we harvest our wild salmon is located 50 miles across from Mt. Redoubt. Today is a nice clear, sunny day so I decided to get a picture of Mt. Redoubt in action. As you can see Redoubt is letting off steam.

We are still taking and shipping orders when the volcano allows. So far we have been able to get orders out every week thanks to FedEx and their efforts to get our seafood out as soon as the sky clears.

We are getting low on Alaska Salmon, the days are getting longer and the snow is slowly melting…summer and the 2009 salmon season are getting closer! We will start our salmon season around June 21st, 2009. We are regulated by Alaska Fish And Game so the day can very.
